we have used generic web analytics tools for this in the past. One such tool is Piwik. Piwik can be configured to capture the search terms people use and then do some visualizations with the collected information. You can easily embed the needed snippet in the footer tile (...\geoportal\catalog\skins\tiles\footer.jsp).
