When I export to Excel, the values in my fields for the dropdowns are "choice0" "choice1" etc. How do I get the value I set in the survey into the Excel workbook?

The Excel export will show the value stored in the database. In Survey123 forms created on the web, the default values for single-choice questions are 'choice0,choice1,...'. This can be changed at the time of publishing.
Survey123 for ArcGIS might be a more appropriate location if this indeed related to that software.
