When you have a feature class with more fields than will fit on screen when viewing the Attribute Table, sometimes I just change the widths to narrow them up rather than hiding them(aka Edit Fields which doesn't work/has issues in an Edit session).
The catch is that once you run a Calculate Field, Pro (3.5.2) will just redraw the whole AT and reset all the column widths.
Please change this behaviour so Pro honours the will of the user and does not reset the column widths.
