Ways to make a heat map

I am trying to make a heat map to illustrate a certain conclusion.

Suppose I have a few points, each with a different value in one of their attributes.

How can I create a heat map indicating the value of that numeric attribute?

 

For example if there are a few water wells scattered across a county, each with a different capacity.

How would you illustrate that the wells in the southern portion of the county generally carry more water?

 

I've seen heat maps be done with Kernel Density, but that is best suited to show a high concentration of points.

How can you create a heat map not based on the concentration/quantity of points in an area but by the magnitude of an attribute of a few features?
