Many-to-many relationships and Publishing a map service

I'm having trouble creating a many-to-many relationship in ArcGIS.  The help docs (ArcGIS Help 10.1) make it sound like it's possible but when I try the dialog for both the "Create Relationship Class" and the "Table to Relationship Class" tools there doesn't seem to be a way to link the interim table inside of there. It's quite confusing. Even the naming of an "origin" and "destination" table doesn't quite make sense to me yet, especially in the M:M case where there's a third table, the linking table, which is nowhere to be seen in the dialog box.

 

Second part of the question is - can the M:M relationship dataset be published as a map service? when I click on my polygon will that relationship be valid and I'll see the many records from my related table appear?

Under the website header there is a tab called "Places". I think you click on that, choose a place, and post it there. I think that's how it works.
