If you are using ArcGIS/ArcSDE 10, create a new field with your desired field name and then calculate the old field to the new field using the field calculator.
At 10.1, you can rename the field in ArcCatalog > feature class Properties > Fields tab. See more information under 'Renaming Fields' here.
