I choose to export to .csv file, when I open the result I only see the entries that I've posted on Survey123 while I'm logged in. Am I missing something obvious? I want to be able to have all the data exported, not only the entries that I've made while logged in.
Any help is greatly appreciated!

The behavior you describe is likely caused by the configuration of your survey layer. In ArcGIS, feature layers can be configured to only show records created by the logged-in user.
For example, in the Survey123 website, the owner of the survey can set what data will be visible through the Collaborate tab when sharing the Survey results:
Similarly, the owner of the survey layer can also control this setting as shown below:
