Hello, I need to clean up our ArcGIS Online organizational accouny by removing old members who are no longer at our org. However, some of them have StoryMaps under their items, what happens if I remove the member along with their item? I'm not sure if their StoryMap would be removed forever. I have no way of contacting them once they have left our organization.

You can transfer ownership of the story to yourself, or another member, before deleting the member. As administrator, you can do this through the admin console for members, or you can go to the item page, then look for Edit next to the owner name.

Yes, but does not StoryMaps take up organization space? If I transfer content to say myself, the storage space is still being used. I also would like to remove content and items to free up space.
You can delete the items after transferring if you don't want them. That will free up space in your account.
But yes, storymaps do take up space. I doubt very much though.
Do you have access to tools that show apps and their dependencies such as web maps and feature services? If not I would recommend such tools help with this effort. GeoJobe has good tools in this area.
