Euclidean Distance or Near (analysis) dataset turn to a graph?

Hello,
I'm a rookie ArcMap user.
I'm not sure if this is possible. I was wondering is there a way to turn the euclidean distance or near (analysis) dataset into a graph such as 2D X (faults) vs Y (isotopes).
 
For example, I have a dataset of isotopes values and faults locations.
 
is there a way where I can turn my plotted isotopes values and faults location on a map to a graph of Isotopes values VS nearest fault location?

location would use up X and Y, leaving Z for isotope values, unless your locations are along a straight line, then you could use "distance from" some location for the X values.
