Symbology Invisible in Map View

are you referring to the symbols themselves, or the associated legend?

Add a legend—Layouts | ArcGIS for Desktop 

you might need to provide a screen grab of the layout and map view to illustrate what you mean

between Map and Layout is Layers... click that

Cool, thanks.  Can't believe I never noticed that before, and never accidentally clicked on Map before.

because arcmap didn't have the 3rd option... just data view and layout view tucked way down at the bottom of the data frame... glad it worked
