How to Change Unclassed Color Labels?

Hi,

I am creating a hotspot map of using the binning feature to represent my data using flat hexagons with a multipart color scheme. I want to rename my labels for better readability by instead of using the number values, by having the lower values (the blue) as being labeled as Low while the higher values in the red being labeled as High on both the active map and the legend layout instead of having just the numbers show up.

I have done it before, I just can't remember how to change it for the life of me right now.
