Can I change the max density value in a heat map?

Hello, I am using ArcGIS Pro 3.3 and use ArcGIS very infrequently, so I apologize for my possible lack of correct terminology. I have created a number of heat maps that reflect heavy metal concentrations in vegetables at various residential areas in an Ontario city. I have one heat map per heavy metal, and I went with heat maps for this so we could keep the specific addresses private while still showing fluctuations in heavy metal concentrations in the city.

I am wondering if it is possible to adjust the maximum density value on the sliding sparse to dense scale of the heat maps. I would like to make it greater than 1.00. I.e., I am hoping that the maximum end of the scale can be adjusted so that it matches permissible limits of each of the heavy metals. Is this possible?

If not, is there another simple way I could display this? Thanks in advance.
