ArcGIS Pro NAS Filer Poor Performance

Our IT recently changed to a new file system (Cohesity) and the performance with ArcGIS Pro has degraded significantly, even after tweaking it (Fast Handles / Oplocks on).  All of our projects are stored there along with all file based data (file geodatabase, shapefiles, etc).  We don't have any issue with NTFS based storage but ArcGIS Desktop seems to struggle with any other NAS storage solutions.  With this, I have a couple of questions for the community:

  1. Has any one else been successful implementing a NAS filer for ArcGIS Desktop apps with any other file system besides NTFS?
  2. Is there any method to stress test a filer for ArcGIS Desktop?  I've looked at the ArcGIS Pro Performance Assessment Tool and it while it seems to test the local desktop environment (CPU/Graphics) and even network bandwidth, it doesn't give me useful metrics on the file system - or maybe I'm not doing it right.

Our workgroup is currently using Pro 3.0.1.  Any suggestions are appreciated - thank you!
