Append to Hosted feature layer - Attributes not carrying over?

I am trying to append 3 shapefiles to a hosted feature layer but none of the attributes are carrying over. The creation of the features works just fine and the fields are mapped in the "Field Map" section of the Append tool but when I take a look at the hosted feature layer, all the attributes are blank and I have to manually match up the features and copy/paste the text over. Am I missing something or can you not append to a hosted feature layer this way?

Yeah I think it is best to:

1. Download a copy of the hosted feature layer.

2. Open in ArcGIS Pro and Append or Join the data to the downloaded layer.

3. Publish it to ArcGIS Online as your own hosted feature layer.

Even if I am the owner of the hosted feature layer?

I discovered that append works as it should with one set of hosted feature layers I have but not for this one.
