Apply Gallery Symbology to Line Graphics in Layout View

I would like the ability to apply a symbology to lines and polygons in the layout view like you can with point graphics. 

The Style button is present for points but not for lines or polygons.

The functionality you are referencing for points is specific to shape markers and is for embedding an existing point symbol into a shape marker. This is not applicable to other symbol layer types.

If you wish to apply a symbol to all selected graphic elements on a layout you can use the ribbon gallery. If you wish to import symbol layers of existing symbols into your symbol you can do this on the structure tab of the symbol editor as show below:
