I was wondering if you could export a filtered table from arc online to excel as a spreadsheet.

You need to be a LEVEL 2 AND USE credits. Query the data you need and go

to The Analysis tab Extract Data

If you are the data owner or the owner has enabled export on the data you can export to excel without using credits from the item details page.

I love that I am able to easily export data to a csv file, but I am referring to exporting emails and names of accounts that log in via the enterprise, under the organization tab.

This isn't possible through the User Interface but is something that we are working on. Until; then you can script an export either through the ArcGIS API for python or with this sample:
