How can I get a list of every variable available for use with the /Enrich endpoint?

Question in the title. I've been searching high and low, and I cannot find a comprehensive list of all variables available to use with the /Enrich endpoint. I don't want to manually search for variables in the variable finder tool. I want a complete list or every variable that can be used to enrich an area.

Yes, but this does not contain the information I am looking for. Next to the description for parameter "analysisVaraibles" is this:

For more information about variables in data collections, visit the Esri Demographics site. Each data collection has a PDF file describing variables and their names.

However, the link to "Esri Demographics site" is broken. I also don't want to use the EnrichLayer/submitJob endpoint. I am using the /Enrich endpoint - I want to know all the possible variables that are supported when making a request to this endpoint.

Here's a tutorial on finding analysis variables to use for your data. It directs you to use this  Analysis Variable Finder tool.
