Any reason why GNSS attachments would be getting saved to lines that do not have GNSS Fields in the attribute table?

No updates have been made to the hosted layer which is edited in an offline Field Maps map. The following has just started randomly being recorded to a .json attachment for lines starting yesterday. Prior to this no lines in the layer had a .json file attached to them.

What's the name & data type of the field where that's getting saved?  Or do you mean it's getting saved to the system attributes of the feature, like where the coordinate data are saved?

There are no fields where any of this data is being saved.  The data in the table above is directly from a .json file attachment for a line stored in a feature layer one the line is created from the field in Field Maps.
