Is it possible to export the queried tables in ArcGIS Online to a more usable format like excel or csv?
I think the only place where you can export a queried/filtered table is through the Open Data site. You can filter data via webmap but not export it. Viewing the details of a hosted feature layer gives you the option to export but not filter.
