I recently have published a few feature services with edit tracking enabled. As far as I can tell, there is no way to "revert back", undo, etc. Granted, at this point I am the only one editing, but this doesn't seem like versioning to me. In addition, the only option for "filtering" edits is by the day? This doesn't seem to be that useful as I would like to see who changed what today, rather than waiting (and not editing for a day) a day to see the differences.
Is this the extent of edit tracking in AGOL? Does Portal for ArcGIS Server differ in any way as I would then have control of the backend storage/DB?
