AEC symbology should be able to represented the same as you see it on ArcGIS Pro.
AEC symbology for specialty like rails has a specific symbology that is only available inside ArcGIS Pro. As soon as upload to AGOL, the symbology cannot be replicated on the cloud.
What you see on ArcGIS Pro should be what you get on AGOL.

Couple of questions on this:
How are you publishing these symbols - web map, layer or web style?
If you are using web map or layer are you checking on the "use compatible symbols?"
If you are using just a layer are you adding it to a web map by rest endpoint url or through an item/add layer in Map Viewer.
If its a web style can you share the desktop file.
Are you using Map Viewer or Map Viewer Classic? Other apps are you using Web AppBuilder or other apps like Instant Apps, ExB or Dashbaords.

Thanks for the reply. I am publishing to AGOL as a layer.
Just to give you a bit more context, the layer is coming in as a 3D dwg rail alignment layer straight from Civil3D to ArcGIS Pro.

Yes - i believe the option "use compatible symbols" is checked on. It's just a Map viewer i am using at this point. Let me know if you need anything else. Feel free to send me an email as well. Perhaps we can do a quick Zoom meeting as well if possible. Easier to explain and show what's happening.

The use compatible symbols will downgrade those symbols which will lose the markers along the hatches and give you a symbol line when opening the layer item or web map in Map Viewer. If you have a web map showing the issue and you can share would help identify any issues.
