Use of Living Atlas Sea Surface Temperature data in ArcMap

I'm interested in using the Sea Surface Temperature dataset here: https://www.arcgis.com/home/item.html?id=7b421e42c17b43f8ad7222b8f71d09e7 The description states "This layer can be used as an input to geoprocessing tools and model builder" but I am not sure how. Can anyone point me to useful resources?

I open it via ArcGIS Online > Open in ArcGIS Desktop > Open in ArcMap > open the resulting .pitem file. It displays as an RGB composite except R,G,B are all listed as Band 1 - clearly this cannot be true as there is a full spectrum of colours. Using Identify brings up values for every available time slice.

First, at a basic level, how do I see a legend for the colours representing temperature?

Second, how do I use the dataset in analysis operations? I have read the topic at https://desktop.arcgis.com/en/arcmap/latest/map/time/about-visualizing-temporal-data.htm and it suggests this is only possible with Python - is that correct?

Thanks - I appreciate the response but I'm not seeing how the mosaic info is relevant - as far as I know the data are consistent in resolution but there are multiple times represented. Sorry if I am misunderstanding.

I also have this open with (UK) support. Understanding the temporal display options (and removing the Cartographic Renderer) allowed me to get specific temperature information from the legend. I can use the layer in analysis operations such as Extract Values To Points and Zonal Statistics but I am not quite sure exactly what the results represent. Support have suggested it is the mean value across the time range selected in the slider but I can't find any Help topics that go into this and am waiting for confirmation / more detail.
