In ArcGIS Hub, the data selector allows one to browse added feature layers. The layers are added from ArcGIS Pro (a feature layer has a layer file added and the result is exported to AGOL) up into ArcGIS Online with full coloured symbology. The symbology shows fine in ArcGIS Online, for example coloured thumbnails can be generated, the map builder also displays the colours fine.
However, in ArcGIS Hub, it is hit and miss as to whether the coloured symbology will be missing or not. Sometimes it appears OK, but more often than not ALL the features on the map are just coloured blue.
It is inconsistent, sometimes it works. Has anyone else experienced this and what can one do to ensure full symbology? Really frustrating.
We experimented with data copied to two feature layers - and one worked and the other went blue - so it is really unclear why this happens.

If you give this a try and are still experiencing issues, we recommend you log a defect with Esri Support Services, and we'll dig into it more deeply.
From here, select Settings > General.
back in the workspace (General pane), when you select Saved layer map style, select Save, and return to the layer’s explore view in Hub, you’ll see the updated style.
