it is possible to edit features offline on the smartphone?

I downloaded the arcGIS app for iPhone and I would like to know if it is possible to colect data or edit features when I'm offline, for example in a field expedition where I don't have internet conection.

Out of the box, the ArcGIS App for iOS can't edit offline, at least not yet (that I know of).  To edit offline you need to create a cache of the data on the mobile device.
So, unless you are willing to work with the ArcGIS API for iOS you will not be able to edit data offline on your iPhone, which is what the sample in the link I gave you will help you with.
