Required Geodatabase feature functions to be enabled for fieldmaps and offline

I am new to Fieldmap and is working on a FieldMap pilot project based on Enterprise ArcGIS 11.   Our field crews need functions of creating points and entering data,  creating map notes,  and tracking to create access roads on iPad.  As I am preparing for Geodatabase features to be used as hosted feature services for field maps,  I like to get help on geodatabase functions to be enabled for field maps and offline usage.  Edit tracking appears to be required.  Do I also need versioning and archiving enabled ?  Any other helpful tips on geodatabase functions and feature service functions will also be greatly appreciated.  Thanks for your help.

Each field crew is assigned to his/her own routes to visit and work on daily basis,  possibly no overlap.  This is the reason I am asking for if versioning is required.  Markup appears to fit our map note requirement but I read that changes will not be reflected as shared markup for Enterprise ArcGIS.  Should this requirement be better handled as a hosted feature service (create map notes) ?
