Is there a way for an end user to avoid to Sign-In when opening a viewer in AGOL?
We are using "'Your ArcGIS organization's URL.' as default to login.

Unless it's public, if you are not already signed in you will have to sign in to view it.
You could try and implement some sort of single sign on (SSO) that uses your organizations active directory or other system to aid in logging in - this helps people keep their credentials they have to remember to a minimum, but it won't necessarily remove the sign in requirement for non-public facing content, just simplifies the process.
