I have a model that keep crashing at the buffer stage, any ideas?

Try running the model in ArcGIS Pro. If your datasets are large and complex you may be hitting some 32bit limitation in ArcMap.
I am working in ArcMap 10.7.1, but I recently had a script that worked fine over the network through many ArcMap versions (10.3.x to 10.5.x), but now has to be run where the GIS processing occurs locally on the Windows 2016 Server server as it failed the majority of the time when processing the data to a file gdb over the network. The script works every time when run locally in ArcMap 10.7.1.
I would also suggest exporting to python so you can enable error handling to see what errors are thrown up.
If you suspect a network issue, try copying it to a local location and buffering it local.
I didn't get to see any error as it totally shut arcmap down 10.6.1 data was being processed across our network
