My preferred web mapping application development is JavaScript API. But I have a task which requires developing applications using Flex API. Any advice on the best approach of learning it quickly?

It would be best for you to talk to your client or supervisor and explain that learning flex just for this project is not practical and the Flex is a technology that has reached mature status and esri advises that now is not the time to begin learning a technology that is being phased out.
If that still does not work then there are multiple resources Flex in a Week and many others that you can Google.

I did explain, but the client is an existing user of Flex.
