Could you please explain, how displaying units in UTM on the ArcGIS Pro map works.
In case we choose display units to UTM – which UTM zone is taken.
Can we choose UTM zone in which units will be displayed ?

The central meridian of a UTM zone and your longitudes determine which utm zone is appropriate for your data. You can display data in the adjacent zone's spatial reference if the locations are in close proximity to the E-W boundary edges, however, you can't choose an arbitrary zone to use
