It would be great to have an optional setting to make SQL mode the default for definition queries, instead of the menu-based query builder (similar to ArcMap).
I don't really use the menu-based query builder; I use SQL expressions exclusively.
It's a different way to think about the design, but I think https://community.esri.com/t5/arcgis-pro-ideas/consolidate-select-by-attribute-expression-modes/idi-p/932980 would achieve the same effect; i.e. you'd be able to work with SQL mode directly without having to switch to it...
