I am working in Map Series and each of my polygons have a different name. How do I use dynamic text so that the name of the polygon is displayed? In the attached picture it is the 1.

That looks more like labels that dynamic text.
If so, right click on polygon layer in TOC and select labeling properties. Then set to the text you want.

When you have a Map Series active, the dynamic text element should present you with a few Map Series-specific items.
You can use the "Attribute" option to choose any of your series layer's attributes.
