We don't have a book specifically for ArcGIS Pro right now, but soon we will be publishing a health-related book for ArcGIS Online, GIS Jumpstart for Health Professionals by Kristen Kurland. It focuses on web-based resources and apps such as ArcGIS Dashboard and is scheduled for release later this fall.
