They generally include a learning plan via the Esri Training Catalog:

The learning plan includes a large number of online courses that are free or included with maintenance. There are a couple of instructor-led ($) courses. As a trainer of these courses, I'd recommend taking the opportunity to attend one if possible.

It has a limited number of sample questions for each exam. I can see three for Enteprise Administration Professional.
The key thing to do is to identify components in the exam guide you are less familiar with and explore recommended courses or documentation pertaining to these items. For example, I know a lot of capable ArcGIS Desktop users struggled with the raster components of the Desktop Professional exam - because it was a data format they don't get the chance to explore. It's also a good chance to round off your understanding of the products and technologies.
