Updating a field 'on the fly' within offline map in Field Maps

I believe it's possible to use an ArcGIS Notebook to calculate a field in a map layer as new data is collected in Field Maps, and was working on doing this when I realized that my company will be using offline maps, so the field won't be updated until the field workers sync their data.

Does anyone have any ideas how it might be possible to update the field before the data is synced with the online data, while it's still only on their individual devices?

An example of what I'm hoping for is, if they record lengths and widths, the square footage field would automatically be calculated for them to see while still in the field, before syncing.

A properly configured form should be able to do this calculation regardless of whether you're online or not. You don't necessarily need a Notebook to do this.
