Find edges in a raster, extract vectors

I have attached an image. The top one is a depth map in perspective. But please treat is as a 2D raster, not a 3D projection.

I want to extract the outlines of the mountains. This means finding the discontinuities in the depth map - abrupt changes mean outlines between different mountains.

I'm struggling to get a 'clean' result in arcgis. I want nice single pixel outlines. The problem is, most slope operations produce fuzzy results, and the Spatial Analyst 'thin' operation doesn't seem to work for me at all.

So, how can I extract nice clean single pixel edges, and then go on to vectorise them. Ideally I'd like to export the vectors so I can then display them with antialiasing. I don't believe ArcGIS is clever enough to antialias.
