Is there a way to simply subtract a certain constant value from each image in a mosaic dataset?

Add a Arithmetic Function to the mosaic dataset. In the properties for the Arithmetic Function, set the Operation to Minus, the Raster to Raster 2 and the Constant to what you want to minus (example being 10 here).
If you wanted to add a different constant to each image, it can be done by the Batch Edit Raster Functions (Select footprints, then right click to Selection - Batch Edit Raster Functions). See the help for this operation and you would need the constant calculated in a field on the Footprints of the mosaic dataset. You would use this field as an input (@Field.fieldname) for the constant. This allows you to use functions and have inputs individually per the raster in the mosaic dataset.
You could also add the function individually to each raster in the mosaic dataset by clicking on Raster in the Raster field within Footprints and adding the functions to each image.
