Looking for a way to schedule a couple of mxds to republish themselves at a certain time every day/week using python or some other way.

There is a sample script in the first link. You can just schedule it in Windows Task Scheduler
I do think it is odd to re-publish an mxd though unless you are programmatically updating the mxd. If it is just the data changing, you don't need to republish the mxd. If it is not updating you can always force it to update by calling AGSSOM (a script you can download) and using it to restart the service. I am sure there are other ways as well.
