Hello ArcGIS Users!

I am new in the GIS world! So, sorry for the easy question:)

I would like to set up very basic Historical Traffic data for my city with just 3 profiles at with 6 time slices.

I understood the logic behind this issue but I actually didn't understand well how to model Hist. Traffic from the tutorial of ArgGIS 10.1.

Could you help me to create a a Profiles Table and Streets-Profiles Join Table?  Do you know any tutorial that I could follow?
