ArcGIS10.1:1 Attribute Table & 2 Excel Tables-How to create 2 new "Join" Tables?

Hi all,

In my ArcGIS 10.1, I have one Attribute Table and 2 Excel Tables (one for Soil results and the other one for Water results). I want to create 2 new "Join" Tables (i. e. one is Attribute Table-Excel Table for Soil, and the other one is AttributeTable-Excel Table for Water). How can I create these 2 new, separate "Join" Tables for the advanced "Query" to extract the detected chemical data?

In the Layer Properties, "Label" menu has the following:  "Method" box has 2 choices: (i) Label all the features the same way. (ii) Define classes of features and label each class differently.  This is the only information I know from the old project someone did before!!    Please kindly help and give me some key steps and main procedures to create the 2 new, separate "Join" Tables (one is Attribute Table-"Join"-Excel Table for Soil, and one is Attribute Table-"Join"-Excel Table for Water.
