A smaller Tile Package from Destop 10.1 using a polygon feature?

Hi all,
In Server 10.1 when creating a cache you can use a feature called 'Area of interest' to keep tiles from being generated in areas when you have no data. How can I do this in Desktop 10.1 ? My map data is diagonal causing a very large amount of empty tiles.

If you already has tiled map service then you should use Export Map Server Cache geoprocessing tool to extract a tile package and it has option of "Area Of Interest".

I wanted to use Desktop so I can continue to use Maplex. It looks like Server switches it back to the standard lable engine.
