Lake Bathymetry - best interpolation method

I would like to produce a bathymetric map of a lake of which I have XYZ-data (Z being depths). Since I'm relatively new to the field of ArcGIS I was wondering whether there was a consistent use of an interpolation type with regard to bathymetry calculations. I was further wondering whether there are some tutorials explaining how to professionally produce bathymetric maps using ArcMap 10.0.

I'd greatly appreciate any kind of help.
