GIS Instruction for Higher Ed Biology Students

Hello,

I work for a small liberal arts college in Los Angeles, and we recently purchased an education site license. We are hoping to integrate GIS into the college community, and my first "bite" is a biology/ecology lab class. I am hoping to get some advice about the best way to go about getting students interested (and hopefully excited about GIS). The professor is eager to show the students maps related to land use, population, and change over time (the latter being the most important).

Does anyone have any advice about teaching students GIS effectively in a "casual" setting? I have a general lesson plan, but I'd appreciate your input.
