Symbolize vector layer by quantities using custom min/max range

I have large amounts of 3D point datasets that I want to have displayed in ArcMap with the same layer symbology, using a legend with graduate colors by z-field value. For this, I want to classify the z-values in e.g. 20 classes, but I want to use the overall min and max values for the values range (that is, the min and max z value of *all* files rather than of each individual file). I can get these overall min and max values with a small model tool I created, but how can I apply a custom range to the symbology of each layer? ArcMap does not let me go beyond the min/max range of each individual layer in the symbology editor.
For raster data, there is the possibility to choose a min-max-stretch type and then change the range with the edit high/low values function - this is just what I need for my vector data. Is there any way to do this with a model tool, python script or similar?
