Spatial Interpolation

I have a series of points signifying the locations of mussel farms on a coastline, each with an attribute of the farm's capacity (ie. the number of mussels in the farm).  I would like to interpolate so that each unobserved point gives a density of mussels within the surrounding area. 

For example, any unobserved point would get a value of # of farmed mussels in the square kilometer surrounding (and centered by) the point.

I have been researching how to do this for the last day, and every method seems to include a method of weighting, non-definable radius, etc.  I feel like this should be relatively simple and would greatly appreciate some advice.
