When collecting photos is there a way to collect the compass or other sensor data and have it included in the feature?

Since you asked the question, I thought it was worth checking if Apple stores the heading as EXIF data in photos taken with iPhone 4. I used EXIF reader to check - they do not.
Pretty sure you would have to write your own application to do this. You probably know this already. I would think iOS has a class that will help you put the heading in with the EXIF data. I don't know for sure. You would probably want to test the magnetometer before relying on it.
