Edit Lyr File

I am working with raster data that reflects a temperature range of -60 to 30 degress C.  I want to create a gray scale to match this range so 0x000000 to 0x5a5a5a ( where 0x5a is 90 decimal).  So I can open up ArcMap and apply a gray scale color ramp but this does not give me a 1-1 mapping.  This leaves me to manually click on the symbology for value -58 and change to 0x020202, ...  Is there a way to edit the lyr file in a text editor?  Any other suggestions?

The bigger picture for this is to enable a flex application to manipulate the raster from a slider.  The raster is pulled into the flex app using exportMap which sends back a PNG.  This PNG knows nothing about raster values, but if symbology is correct the color holds the raster value.
