GIS short course reading recommendations for upper-level high school students?

Not sure if this is the correct place to ask this question, but I was wondering if the GIS community had suggestions or recommendations for introductory level GIS reading material, resources, or literature that would be useful for upper-level high school or freshman-level college students? I am teaching an introductory GIS course to high-achieving high school students, and am looking to assign readings before the short course begins (1 week duration). The course will focus on introducing students to GIS and how it is applied to mapping sea level rise. Any recommendations on GIS and sea level rise books are also welcome.
