Are there any examples that show how to allow the user to graphically add/update/delete polygon features on a feature layer? All the examples in the SDK i could find seem to only show how to do it with points.

However there are other parts of the samples that shows what you need.
Naturally to actually update the geometry to a polygon you of course set the feature.Geometry property to a new polyline or polygon geometry.
This Graphics sample shows how to draw and/or edit lines and polygons. It essentially works the same way with features:

One thing to note though: With feature layers, it might be a good idea to first hide the feature from the featurelayer (featureLayer..SetFeatureVisible(feature,false)) before starting to edit it with the Sketch Editor, so it won't show twice, then turn it back on, after applying the edit back into the database.
