How do I summarize within squares (or regular hexagons)?

In ArcGIS Online I have demographic data (from BAO) arranged over irregular regions (usually census tracts, sometimes Zip code areas).  I'd like to convert that irregular arrangement to a regular array.  I tried the summarize within command applied to squares.  Documentation promises squares but the grid that resulted was based on rectangles with an aspect ratio of roughly 2.  (The hexagon layer was also far from regular.)


Is there a reasonable way to get actual squares?  (My typical maps range from 15 - 50 miles across so curvature shouldn't be a problem.)
