Has anyone had issues with Feature Class corruption while editing in ArcGIS Pro?

No.  You will need to explain your work situation. Is this locally stored data? Type? What you were editing? etc

I was editing a Feature Class dataset and the file corrupted and I couldn't open. When trying to fix the issue the whole Feature Dataset completely disappeared out of the GDB.

Edits: adding a field and deleting a field.

Nothing out of the ordinary. I don't suppose that you can replicate the issue.  You would also need to specify how you were trying to 'fix it'.  As for adding then deleting a field, at any time before, during or after did you Save that step?

If this happens again and was not a one-off on a particular file, then you will need to contact tech support so they can isolate the source of the problem
